Lazy Dinner: Sheet Pan Fajitas

Hungry for something at least halfway healthy, but not in the mood to really cook or clean up a mess? I believe what you may be looking for is...FAJITAS!

This is seriously so simple, and all I did was wad up the aluminum foil and throw it in the trash afterwards, making cleanup a breeze! Not to mention, I'm a sucker for anything Mexican, making this dish even better! So, let's keep this short and sweet shall we?

Preheat your oven to 400º, and while it's warming cut up 2 large bell peppers (I used orange and yellow, but use whatever you have!). Cut them in strips, about a quarter inch thick and place in a bowl. Chop one medium onion length wise and add in with the peppers. For your chicken, I used tenderloins and cut them into long strips about half an inch thick, and you guessed it, add them in with peppers and onions.

Now for the spices, in your bowl add in:

1T Olive Oil

Salt & Pepper to taste

1/2T Cumin

1T Chili Powder

1tsp Dried Parsley

Sprinkle of Red Pepper flakes

1tsp Onion Powser

1/2T Garlic Powder

2 Cloves Garlic, minced

1tsp Dried Thyme

Toss everything together until it's evenly coated. Feel free to add in more or less of your seasonings to make it how you want it. I use a lot of cumin and chili powder for a bold taste, but some prefer a little less - you really can't mess this up!

Line a rimmed cookie sheet with foil or parchment paper, and add in your fajitas in a single layer. Place it in the oven for 10 minutes, then toss and cook for an additional 10 minutes. When I had about 5 minutes left I also added in slices of Campari tomatoes --sooo good! Once you remove them from the oven squeeze half a lime over and allow to rest for a moment before serving up!

While it's cooking, prepare you toppings and heat your tortillas. I used avocado, fresh cilantro, sour cream & Mexican cheese. Paired with a side of refried beans and you feel just like you're in a restaurant!

Pro Tip: To quickly & easily warm your tortillas, layer them with damp paper towels and heat in the microwave for 15 seconds.

Moment of honesty, I took a few Insta story snaps while I was preparing this, but when they came out of the oven the smell was heavenly! So, I completely forgot about my "blogger life" and chowed down without taking finished product pictures. Whoops!
