Homemade Pizza, Cauliflower Style! PS- It's *Really* Good

Ok y'all, I wasn't planning on blogging this particular recipe, but so many of you messaged me asking for details I decided to share! Cutting out carbs or just looking for a healthier solution to pizza? I have you covered!

I literally live for pizza, but with Chandler's new "no carb, high protein" lifestyle, we've had to change up the way we eat and that means overcoming my deepest desires to order a pizza! I've been on the fence about a cauliflower pizza crust, but decided to give it a try, and believe it or not, Chandler said he probably wouldn't have even noticed it wasn't a "real" dough! I also decided to take this pizza a step further and make a homemade marinara sauce because I'm not really a fan of the store bought jars or the sugars that come with it. So, here's what I came up with:

Crust:

2 - 1lb Bags of chopped cauliflower in steam bags (*This made a pretty thick crust and I could have actually made two smaller pizzas out of this, so you can have a thicker crust, make two, or just use one bag)

3/4 Cup Mozzarella Cheese, shredded

1/4 Cup Parmesan Cheese, shredded

2 Eggs, lightly beaten

1 tsp Italian Seasoning

1/2T Dried Oregano

Sprinkle of Dried Parsley

Salt & Pepper to taste

Steam or cook cauliflower according to directions, then drain AND strain using a kitchen towel. Allow for it to cool before you strain, otherwise you'll end up with burnt hands! Straining with a towel is VERY important, you will be shocked at how much water comes out! If you leave all that in you'll be left with a soggy crust -- ew. Spread out in a circle over parchment paper, either on a cookie sheet or pizza stone (I have this one), and bake at 425º for 20 - 30 minutes, depending on thickness, until bubbling golden brown.

Marinara Sauce:

2T Olive Oil

2 Cloves Garlic, minced

1/2 Onion, finely chopped

4T Chopped Fresh Parsley

1T Chopped Fresh Basil

1/2T Garlic Powder

1/2T Onion Poweder

2tsp Dried Oregano

Salt & Peper to Taste

1 - 28oz can crushed tomatoes, with juices

1/2 Cup Dry White Wine

In a stock pot, heat olive oil over medium high heat then add onion and garlic. Cook until fragrant, reduce heat to medium and add tomatoes, wine and all spices. Allow to simmer, stirring as needed for 30 - 45 minutes. Taste and add any additional spices you deem fit.

Pizza:

Once your crust is cooked, allow to cool a bit and remove parchment paper from bottom and reduce heat to 400º. Cover in marinara sauce, cheese and whatever toppings you want! Place back in oven and cook for another 15-20 minutes depending on what toppings you choose. Enjoy!
