So, it's been a while since I shared a recipe with you guys, let me tell you why, and then share my Sheppard's Pie (like that accidental rhyme?) recipe that in a way, brought me back to life.

Hungry for something at least halfway healthy, but not in the mood to really cook or clean up a mess? I believe what you may be looking for is...FAJITAS! 

This is seriously so simple, and all I did was wad up the aluminum foil  and throw it in the trash afterwards, making cleanup a breeze! Not to mention, I'm a sucker for anything Mexican, making this dish even better! So, let's keep this short and sweet shall we?

Y'all, my family loves cajun food. Like eat it every chance we get kind of love. Gumbo, jambalaya, boudain, étouffée... GIVE. ME. IT. ALL. When we lived in Missouri a few of the coaches and their wives were from Southern Louisiana, it's here where I learned the difference in "cajun food" and real cajun food...my love grew deep and I soaked up as much knowledge from them as I could. 

When we moved back to Tennessee we really started missing our almost monthly cajun cookouts with that football...

You guys, this was seriously so good! I had to give myself a pat on the back when I took my first bite...it was that good, and SO easy!

We eat a lot of chicken. I mean, a lot. So, I'm always trying to come up with new recipes to change it up. Deep sea fishing requires 3 things:

1. A strong stomach (the smell isn't great and sea sickness is real), or sea bands - these are amazing! I can handle almost anything with those on! Side note, also great for pregnant ladies! I have these.

2. Stamina for heat. We went on a smooth water day which is great for sea sickness, but the counter is no breeze! We did an eight hour trip this time, and even though the cabin is air conditioned, reeling in/fighting with a 20+ pound for hours on in is exhausti...

You. Read. That. Correctly.

Do you ever find yourself in a cooking rut? I do! Chicken, Beef, Chicken, Pork, Chicken, Chicken, blah...blah...blah! No matter how much I try to spice it up, I find myself going back to the basics and getting sick of it! That moment of "I MUST COOK SOMETHING NEW!" is when I typically find my best recipes.

If you thought CORNBREAD, you've come to the right place, because I happen to have the BEST cornbread recipe you'll find. If it sounds like I'm bragging, I am, but then again, you would to if you had a family heirloom.

So, here's the deal. My great grandmother (Meme) made the best cornbread known to man. I now have the distinct honor of making cornbread in her beloved Lodge #7 skillet....
